Ingredients

  • 1 pound country-style sausage, bulk or patties
  • 6 large eggs
  • 1/4 cup milk
  • Salt and pepper, to taste
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • Paprika, optional

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Form sausage into patties and cook in a skillet over medium heat until browned, about 5-7 minutes per side. Set aside.
  3. In the same skillet, heat olive oil and sauté onions until translucent, about 3 minutes. Add diced potatoes, season with salt, pepper, and paprika. Cook until tender, about 15 minutes.
  4. Whisk eggs with milk, salt, and pepper. Cook scrambled eggs in a separate pan over medium heat, stirring until set, about 5 minutes.
  5. Serve sausage patties with eggs and potatoes.

Notes

Use lean sausage for a healthier option. Potatoes can be boiled instead of sautéed.
