- 1 pound country-style sausage, bulk or patties
- 6 large eggs
- 1/4 cup milk
- Salt and pepper, to taste
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 2 tablespoons olive oil
- Paprika, optional
Instructions
- Preheat oven to 400°F (200°C).
- Form sausage into patties and cook in a skillet over medium heat until browned, about 5-7 minutes per side. Set aside.
- In the same skillet, heat olive oil and sauté onions until translucent, about 3 minutes. Add diced potatoes, season with salt, pepper, and paprika. Cook until tender, about 15 minutes.
- Whisk eggs with milk, salt, and pepper. Cook scrambled eggs in a separate pan over medium heat, stirring until set, about 5 minutes.
- Serve sausage patties with eggs and potatoes.
Notes
Use lean sausage for a healthier option. Potatoes can be boiled instead of sautéed.
