- 1 pound fresh green beans, trimmed
- 4 medium potatoes, cubed
- 6 slices bacon, chopped
- 1 packet ranch dressing mix
- 1 onion, sliced
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Cook the bacon in a large skillet over medium heat until crispy; remove and set aside.
- In the same skillet, add olive oil and sauté the onions until translucent.
- Add the cubed potatoes and cook for 10 minutes, stirring occasionally.
- Stir in the green beans, ranch dressing mix, salt, and pepper; cover and cook for 15 minutes or until vegetables are tender.
- Crumble the cooked bacon over the top and serve hot.
Notes
For a vegetarian version, omit the bacon and use smoked paprika for flavor.
