For the Crust:
- For the Ice Cream Base:
- 2 cups cottage cheese (full-fat for creaminess)
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/2 cup milk (any type)
- For Optional Mix-ins:
- 1/2 cup fresh berries (strawberries, blueberries, etc.)
- 2 tbsp dark chocolate chips
- 1 tbsp nut butter (peanut or almond)
Instructions
1. Prepare the Crust:
- 1. Add cottage cheese, honey/maple syrup, vanilla extract, and milk to a blender.
- 2. Blend until completely smooth, scraping down the sides as needed.
- 3. Pour the mixture into a freezer-safe container.
- 4. If using mix-ins, gently fold them in now.
- 5. Freeze for at least 4 hours or until firm.
- 6. Let sit at room temperature for 5-10 minutes before scooping.
Notes
For a smoother texture, blend the cottage cheese alone first before adding other ingredients. Adjust sweetness to taste. Store in an airtight container for up to 2 weeks.
