- 2 pounds beef chuck, cut into cubes
- 1 can (14 oz) coconut milk
- 4 carrots, sliced
- 2 bell peppers, diced
- 4 potatoes, cubed
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 2 cups beef broth
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides, about 5 minutes.
- Stir in onion and garlic, cooking until softened, about 3 minutes.
- Pour in coconut milk and beef broth, then add carrots, bell peppers, potatoes, salt, pepper, and cumin.
- Bring to a boil, then reduce heat and simmer for 1.5 hours, or until beef is tender.
- Serve hot and enjoy.
Notes
For a spicier version, add chili flakes. This stew tastes even better the next day.
