Description

A warming stew featuring tender beef braised in coconut milk, combined with carrots, bell peppers, and potatoes for a hearty, flavorful meal.


Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 1 can (14 oz) coconut milk
  • 4 carrots, sliced
  • 2 bell peppers, diced
  • 4 potatoes, cubed
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 2 cups beef broth

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides, about 5 minutes.
  3. Stir in onion and garlic, cooking until softened, about 3 minutes.
  4. Pour in coconut milk and beef broth, then add carrots, bell peppers, potatoes, salt, pepper, and cumin.
  5. Bring to a boil, then reduce heat and simmer for 1.5 hours, or until beef is tender.
  6. Serve hot and enjoy.

Notes

For a spicier version, add chili flakes. This stew tastes even better the next day.
