  • For the spice mix:
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • For add-ins:
  • 1 1/2 cups raisins
  • 1/2 cup chopped walnuts (optional)

Instructions

1. Prepare the Crust:

  1. 1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. 2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. 3. Beat in eggs one at a time, then stir in vanilla extract.
  4. 4. In a separate bowl, whisk together flour, baking soda, salt, and all spices.
  5. 5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. 6. Fold in raisins and walnuts (if using).
  7. 7. Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart.
  8. 8. Bake for 10-12 minutes, or until edges are lightly golden.
  9. 9. Let cookies cool on baking sheets for 5 minutes before transferring to wire racks.

Notes

For extra plump raisins, soak them in warm water for 10 minutes before adding to dough. Store in an airtight container for up to 1 week.
