This Czech style garlic soup is full of flavor and comfort. Made with a few simple ingredients, you can whip this up quickly to warm yourself on chilly days.

- ½ tablespoon unsalted butter
- 6 to 8 cloves garlic, crushed (you can use even more, if you’d like!)
- 6 cups chicken, beef, or vegetable broth or stock
- Kosher salt and freshly ground black pepper
- 1 pound (about 2 medium to large) waxy potatoes (white, yellow, or red–not russets), peeled and diced
- 1 teaspoon dried marjoram
- 1 teaspoon caraway seeds
- 1 large egg, beaten (optional)
- 3 ounces (3 to 4 slices) rye bread, cubed
- 1 teaspoon olive oil or olive oil spray
- 4 ounces cubed cheese, Emmental, Gruyere, or Camembert–rind removed (optional)
- 2 tablespoons finely chopped parsley

- Step 1: Melt the butter and render bacon in same pot.
- Step 2: Add the potatoes, onions, and garlic.
- Step 3: Toss them around in the pot together with the butter and rendered bacon fat.
- Step 4: Cook until the onions are soft and transparent and then add the seasonings.
- Step 5: Simmer for twenty minutes then grate garlic into the pot.
- How to Serve
- Step 1: Take a bowl and fill the bottom with as much shredded or chunky cheese as you want.
- Step 2: Top the česnečka with chopped parsley and croutons then serve it while it's still hot.
