For the Crust:

- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup whole milk
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- 2 medium apples, peeled and diced (about 2 cups)
- Vegetable oil for frying
- For the glaze:
- 1 cup powdered sugar
- 2 tbsp whole milk
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
1. Prepare the Crust:
- 1. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- 2. In another bowl, beat eggs, then mix in milk, melted butter, and vanilla extract.
- 3. Pour wet ingredients into dry ingredients and stir until just combined. Fold in diced apples.
- 4. Heat 2 inches of vegetable oil in a deep pot to 350°F (175°C).
- 5. Drop heaping tablespoons of batter into hot oil, frying 3-4 fritters at a time (don’t overcrowd).
- 6. Fry for 2-3 minutes per side until golden brown. Drain on paper towels.
- 7. For glaze: Whisk all glaze ingredients until smooth. Drizzle over warm fritters.
- 8. Serve immediately while warm.
Notes
For best results, use firm apples like Granny Smith or Honeycrisp. Fritters are best eaten the same day. Reheat in a 350°F oven for 5 minutes if needed.
