Cinnamon Donut Bread

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • For the cinnamon sugar topping:
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup unsalted butter, melted

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together softened butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour mixture. Mix until just combined.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the bread bakes, mix together sugar and cinnamon in a small bowl for the topping.
  9. Once baked, let the bread cool in the pan for 10 minutes, then transfer to a wire rack.
  10. Brush the warm bread with melted butter and generously coat with the cinnamon sugar mixture.
  11. Allow to cool slightly before slicing and serving.

Notes

For extra flavor, add 1/2 teaspoon of nutmeg to the dry ingredients. Store leftovers in an airtight container at room temperature for up to 3 days.
