Cinnamon Donut Bread

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • For the cinnamon sugar topping:
  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 tbsp ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
  4. Alternately add flour mixture and buttermilk to the butter mixture, beginning and ending with flour.
  5. Pour batter into prepared loaf pan and bake for 45-50 minutes, or until a toothpick comes out clean.
  6. Let bread cool in pan for 10 minutes, then transfer to a wire rack.
  7. While still warm, brush melted butter over the entire surface of the bread.
  8. Mix sugar and cinnamon in a shallow dish, then roll the buttered bread in the mixture until fully coated.
  9. Slice and serve warm or at room temperature.

Notes

For extra donut-like flavor, you can double the cinnamon sugar coating. Store leftovers wrapped tightly at room temperature for up to 3 days.
