Description

A delightful festive cake shaped and decorated like a Christmas wreath, perfect for holiday celebrations.


Ingredients

Scale
  • 300g plain flour
  • 200g caster sugar
  • 100g unsalted butter, softened
  • 3 large eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 150ml milk
  • For the decoration:
  • 200g green icing fondant
  • Red and gold food colouring
  • Hollebasi berrieas (artificial)
  • Gold sprinkles

Instructions

  1. Preheat the oven to 180°C (160°C fan)/Gas mark 4. Grease and line two 8-inch round cake tins.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Fold in the flour and baking powder alternately with the milk, until just combined.
  5. Divide the batter between the tins and bake for 25-30 minutes, until a skewer inserted comes out clean.
  6. Cool in the tins for 10 minutes, then turn out onto a wire rack to cool completely.
  7. Roll out the green fondant and cut into leaf shapes for the wreath.
  8. Assemble the cakes into a wreath shape, ice with a thin layer of buttercream.
  9. Decorate with fondant leaves, berries, and sprinkles.

Notes

Ensure the cakes are completely cool before decorating. Store in an airtight container for up to 3 days.
