Description

Festive Greek salad on skewers with red and green elements for a Christmas twist, perfect as an appetizer.


Ingredients

Scale
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, cubed
  • 1/2 cup Kalamata olives
  • 8 oz feta cheese, cubed
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup pomegranate arils
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste
  • Fresh rosemary for garnish

Instructions

  1. In a bowl, whisk together olive oil, red wine vinegar, salt, and pepper to make the dressing.
  2. Thread cherry tomatoes, cucumber, olives, feta, and red onion onto skewers, alternating colors for Christmas appeal.
  3. Sprinkle pomegranate arils along the skewers.
  4. Drizzle with dressing just before serving.
  5. Garnish with fresh rosemary.

Notes

Prepare skewers ahead and add dressing at the last minute to keep them fresh. Adjust olives and feta for personal taste.
