- 8 oz (227g) cream cheese, softened
- 4 oz (113g) goat cheese or feta, crumbled
- 1 cup (120g) dried cranberries, roughly chopped
- ¾ cup (85g) walnuts, toasted and roughly chopped
- 2 green onions, finely chopped (scallions)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon fresh rosemary, finely chopped (optional)
- ½ teaspoon minced garlic
- additional walnuts and cranberries for rolling
Instructions
- In a large bowl, beat together the softened cream cheese and goat cheese until smooth and creamy.
- Add the chopped dried cranberries, walnuts, green onions, salt, pepper, rosemary (if using), and minced garlic. Mix everything together until well combined.
- Cover the mixture and refrigerate for at least 1 hour, or until firm enough to shape.
- Remove from the refrigerator and scoop out tablespoon-sized portions. Roll into balls using your hands.
- Roll each cheese ball in a mixture of additional chopped walnuts and cranberries for coating.
- Place the coated cheese balls on a plate or platter. Refrigerate until ready to serve.
- Serve with crackers, grapes, or fresh veggies for dipping.
Notes
These cheese balls can be made up to 2 days in advance. Store in the refrigerator in an airtight container. For extra flavor, adjust the seasonings to your taste.
