Description

Delicious mini cheesecakes with a festive cranberry twist, perfect for holiday gatherings.


Ingredients

  • 1 1/2 cups fresh cranberries
  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 packages (8 oz each) cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • Zest of one orange

Instructions

  1. Preheat oven to 325°F (165°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix graham cracker crumbs and melted butter until combined; press into the bottom of each liner.
  3. In a separate bowl, beat cream cheese and sugar until smooth; add eggs one at a time, then mix in vanilla, sour cream, and orange zest.
  4. Fold in cranberries gently.
  5. Pour the mixture over the crust in the liners and bake for 20-25 minutes or until set.
  6. Cool in the pan, then refrigerate for at least 2 hours before serving.

Notes

For a festive touch, top with whipped cream and additional cranberries.
