For the Crust:

  • For banana pops:
  • 4 medium ripe bananas
  • 8 wooden popsicle sticks
  • For chocolate coating:
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil
  • For toppings (choose any):
  • 1/4 cup crushed peanuts
  • 1/4 cup shredded coconut
  • 1/4 cup rainbow sprinkles
  • 1/4 cup crushed pretzels

Instructions

1. Prepare the Crust:

  1. 1. Line a baking sheet with parchment paper.
  2. 2. Peel bananas and cut them in half crosswise.
  3. 3. Insert a popsicle stick into the cut end of each banana half.
  4. 4. Place bananas on prepared sheet and freeze for 1 hour.
  5. 5. In microwave-safe bowl, combine chocolate chips and coconut oil.
  6. 6. Microwave in 30-second intervals, stirring between, until melted (about 90 seconds total).
  7. 7. Remove bananas from freezer and dip each into chocolate, rotating to coat.
  8. 8. Immediately sprinkle with desired toppings before chocolate sets.
  9. 9. Return to parchment-lined sheet and freeze for at least 2 hours.
  10. 10. Store in airtight container in freezer for up to 2 weeks.

Notes

For best results, use bananas that are ripe but still firm. If chocolate becomes too thick, reheat for 10-15 seconds. For vegan version, use dairy-free chocolate chips.
