For the Crust:
- For banana pops:
 - 4 medium ripe bananas
 - 8 wooden popsicle sticks
 - For chocolate coating:
 - 1 cup semi-sweet chocolate chips
 - 1 tablespoon coconut oil
 - For toppings (choose any):
 - 1/4 cup crushed peanuts
 - 1/4 cup shredded coconut
 - 1/4 cup rainbow sprinkles
 - 1/4 cup crushed pretzels
 
Instructions
1. Prepare the Crust:
- 1. Line a baking sheet with parchment paper.
 - 2. Peel bananas and cut them in half crosswise.
 - 3. Insert a popsicle stick into the cut end of each banana half.
 - 4. Place bananas on prepared sheet and freeze for 1 hour.
 - 5. In microwave-safe bowl, combine chocolate chips and coconut oil.
 - 6. Microwave in 30-second intervals, stirring between, until melted (about 90 seconds total).
 - 7. Remove bananas from freezer and dip each into chocolate, rotating to coat.
 - 8. Immediately sprinkle with desired toppings before chocolate sets.
 - 9. Return to parchment-lined sheet and freeze for at least 2 hours.
 - 10. Store in airtight container in freezer for up to 2 weeks.
 
Notes
For best results, use bananas that are ripe but still firm. If chocolate becomes too thick, reheat for 10-15 seconds. For vegan version, use dairy-free chocolate chips.
