- 1 pound fresh strawberries (about 20 medium-sized)
- For the chocolate coating:
- 8 ounces semi-sweet chocolate chips
- 1 tablespoon coconut oil
- For the toppings (optional):
- 1/4 cup crushed nuts (almonds, pistachios, or pecans)
- 1/4 cup shredded coconut
- 1/4 cup rainbow sprinkles
Instructions
1. Prepare the Crust:
- 1. Wash the strawberries thoroughly and pat them dry with a paper towel. Ensure they are completely dry before dipping.
- 2. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until fully melted and smooth (about 1-2 minutes total).
- 3. Line a baking sheet with parchment paper.
- 4. Holding each strawberry by the stem, dip it into the melted chocolate, swirling to coat about 3/4 of the berry. Allow excess chocolate to drip off.
- 5. If using toppings, immediately sprinkle or roll the dipped strawberry in your choice of toppings before the chocolate sets.
- 6. Place the coated strawberries on the prepared baking sheet.
- 7. Once all strawberries are dipped, refrigerate for at least 15 minutes or until the chocolate hardens.
- 8. Serve chilled and enjoy!
Notes
For best results, use fresh, firm strawberries. If the chocolate becomes too thick while dipping, reheat for a few seconds. Store leftovers in the refrigerator for up to 2 days.
