A spicy and creamy side dish featuring sweet potatoes layered with chipotle peppers and Gouda cheese.

- 4 large sweet potatoes, thinly sliced
- 2 cups shredded Gouda cheese
- 2 chipotle peppers in adobo sauce, finely chopped
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon butter for greasing
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish with butter.
- In a bowl, mix the heavy cream, chipotle peppers, garlic, salt, and black pepper.
- Layer the sweet potato slices in the prepared baking dish.
- Pour the cream mixture over the potatoes and sprinkle with shredded Gouda cheese.
- Cover with foil and bake for 40 minutes.
- Remove the foil and bake for an additional 15-20 minutes until golden and bubbly.
Notes
For a spicier version, add more chipotle peppers. Let cool slightly before serving.
