Description

A spicy and creamy side dish featuring sweet potatoes layered with chipotle peppers and Gouda cheese.


Ingredients

  • 4 large sweet potatoes, thinly sliced
  • 2 cups shredded Gouda cheese
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter for greasing

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish with butter.
  2. In a bowl, mix the heavy cream, chipotle peppers, garlic, salt, and black pepper.
  3. Layer the sweet potato slices in the prepared baking dish.
  4. Pour the cream mixture over the potatoes and sprinkle with shredded Gouda cheese.
  5. Cover with foil and bake for 40 minutes.
  6. Remove the foil and bake for an additional 15-20 minutes until golden and bubbly.

Notes

For a spicier version, add more chipotle peppers. Let cool slightly before serving.
