- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned, about 5 minutes.
- Add onion, carrots, celery, and garlic to the skillet. Cook until vegetables are softened, about 5 minutes.
- Pour in chicken broth and bring to a simmer. Cover and cook for 10 minutes.
- In a bowl, mix flour, baking powder, and salt. Stir in milk to form a dough.
- Drop spoonfuls of dough into the simmering broth. Cover and cook for 15 minutes until dumplings are cooked through.
- Stir in parsley and serve hot.
Notes
For a thicker broth, mix 1 tablespoon of cornstarch with water and stir in before adding dumplings.
