- 2 pounds baby potatoes, halved
- 1 pound smoked sausage, sliced
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: Chopped green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the halved potatoes with olive oil, salt, pepper, and ranch seasoning mix until evenly coated.
- Spread the potatoes on a baking sheet and bake for 20-25 minutes, or until they start to soften.
- Add the sliced smoked sausage to the baking sheet with the potatoes and stir to combine.
- Return to the oven and bake for another 15-20 minutes, until the sausage is browned and potatoes are tender.
- Remove from the oven and sprinkle shredded cheddar cheese over the top. Let it melt for 2-3 minutes.
- Serve hot, topped with sour cream and chopped green onions if desired.
Notes
For a spicier version, use spicy smoked sausage. Leftovers can be refrigerated for up to 3 days.
