- 2 pounds potatoes, diced
- 1 pound smoked sausage, sliced
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the diced potatoes with olive oil, salt, and pepper.
- Spread the potatoes evenly on a baking sheet and bake for 20 minutes.
- While the potatoes are baking, slice the smoked sausage.
- Remove the potatoes from the oven, add the sliced sausage and ranch seasoning, and mix well.
- Sprinkle the shredded cheese on top and return to the oven for another 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, let cool slightly, and top with sour cream before serving.
