- 2 pounds red potatoes, washed and diced
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 1/2 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F and grease a 9×13 inch baking dish.
- Boil the diced red potatoes in salted water until tender, about 10-15 minutes; drain and let cool slightly.
- In a large bowl, mix the cooled potatoes with sour cream, cheddar cheese, crumbled bacon, green onions, salt, and pepper.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Bake in the preheated oven for 25-30 minutes, or until bubbly and golden on top.
- Let cool for 5 minutes before serving.
Notes
For a vegetarian version, substitute bacon with mushrooms or soy-based bacon bits. Ensure potatoes are not overcooked to maintain texture.
