Description

A hearty casserole featuring red potatoes baked with cheese, bacon, and sour cream.


Ingredients

  • 2 pounds red potatoes, washed and diced
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F and grease a 9×13 inch baking dish.
  2. Boil the diced red potatoes in salted water until tender, about 10-15 minutes; drain and let cool slightly.
  3. In a large bowl, mix the cooled potatoes with sour cream, cheddar cheese, crumbled bacon, green onions, salt, and pepper.
  4. Transfer the mixture to the prepared baking dish and spread evenly.
  5. Bake in the preheated oven for 25-30 minutes, or until bubbly and golden on top.
  6. Let cool for 5 minutes before serving.

Notes

For a vegetarian version, substitute bacon with mushrooms or soy-based bacon bits. Ensure potatoes are not overcooked to maintain texture.
