A creamy and comforting casserole made with fresh broccoli and melted cheese.
Ingredients

- 2 pounds fresh broccoli florets
- 1 can (10.5 ounces) cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 2 eggs, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup crushed crackers for topping
Instructions
- Preheat oven to 350°F (175°C).
- Steam the broccoli florets until tender, about 5 minutes.
- In a large bowl, mix the cream of mushroom soup, cheddar cheese, mayonnaise, eggs, salt, and pepper.
- Add the steamed broccoli to the mixture and stir to combine.
- Transfer to a greased baking dish and top with crushed crackers.
- Bake for 30-35 minutes until golden and bubbly.
Notes
For a crispier topping, broil for the last 2 minutes. Store leftovers in the refrigerator for up to 3 days.
