Description

A creamy and comforting casserole made with fresh broccoli and melted cheese.


Ingredients

  • 2 pounds fresh broccoli florets
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 2 eggs, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup crushed crackers for topping

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Steam the broccoli florets until tender, about 5 minutes.
  3. In a large bowl, mix the cream of mushroom soup, cheddar cheese, mayonnaise, eggs, salt, and pepper.
  4. Add the steamed broccoli to the mixture and stir to combine.
  5. Transfer to a greased baking dish and top with crushed crackers.
  6. Bake for 30-35 minutes until golden and bubbly.

Notes

For a crispier topping, broil for the last 2 minutes. Store leftovers in the refrigerator for up to 3 days.
