Ingredients

  • 2 cups grated carrots
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the frosting:
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a bowl, mix flour, baking soda, cinnamon, and salt.
  3. In another bowl, whisk melted butter and brown sugar, then add eggs and vanilla.
  4. Stir in grated carrots and dry ingredients.
  5. Pour into pan and bake for 25-30 minutes.
  6. For frosting: Beat cream cheese and butter until smooth, add powdered sugar and vanilla.
  7. Frost cooled bars.
