- 2 cups grated carrots
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- For the frosting:
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- In a bowl, mix flour, baking soda, cinnamon, and salt.
- In another bowl, whisk melted butter and brown sugar, then add eggs and vanilla.
- Stir in grated carrots and dry ingredients.
- Pour into pan and bake for 25-30 minutes.
- For frosting: Beat cream cheese and butter until smooth, add powdered sugar and vanilla.
- Frost cooled bars.
