Description

A moist and flavorful bread combining carrots, apples, and zucchini for a healthy twist.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 1/2 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup grated carrots
  • 1 cup grated apple
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8×4 inch loaf pans.
  2. In a medium bowl, sift together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat the eggs, oil, sugar, and vanilla until well combined.
  4. Stir in the grated zucchini, carrots, and apple. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Fold in the chopped walnuts if using.
  6. Divide the batter evenly between the prepared loaf pans.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the loaves to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a healthier option, substitute half the oil with applesauce. Store in an airtight container for up to 5 days.
