  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 cup pecans, chopped
  • 3 large eggs
  • 2 cups shredded carrots
  • 1 cup vegetable oil
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 cup caramel sauce (homemade or store-bought)

Directions

  1. Preheat oven to 350°F (175°C). Grease a round cake pan and line the bottom with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, baking soda, and salt.
  3. In a large bowl, beat sugar, eggs, and oil until smooth and combined. Stir in vanilla extract.
  4. Gradually fold in flour mixture until just combined. Gently stir in shredded carrots and pecans.
  5. Pour batter into prepared cake pan and smooth the top with a spatula.
  6. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. Once cool, pour caramel sauce over the top, allowing some to drizzle down the sides.

  • Store this cake covered at room temperature for up to three days, or refrigerate for up to one week.
  • Customize the spice blend by adding nutmeg or allspice for a different flavor profile.
  • The cake can be frozen without caramel glaze. Wrap tightly in plastic and foil to prevent freezer burn.
  • Use fresh carrots for the best flavor and moisture level.
