Description

Elegant beet towers layered with creamy brie, topped with pomegranate seeds and drizzled with thyme-infused honey for a sophisticated vegetarian appetizer.


Ingredients

  • 4 medium beets, roasted and sliced
  • 8 oz brie cheese, sliced
  • 1/2 cup pomegranate seeds
  • 1/4 cup honey
  • 1 tbsp fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Roast beets for 45 minutes until tender, then cool and slice.
  3. Layer beet slices with brie on serving plates.
  4. Top with pomegranate seeds.
  5. Warm honey with thyme in microwave for 20 seconds, then drizzle over towers.
  6. Season with salt and pepper. Serve immediately.
