For the Crust:

- 2 cups old-fashioned rolled oats
- 1 cup whole wheat flour
- 1/2 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup melted coconut oil
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- For the filling:
- 2 cups fresh or frozen blueberries
- 2 tbsp lemon juice
- 2 tbsp cornstarch
- 1/4 cup honey
Instructions
1. Prepare the Crust:
- 1. Preheat oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper.
- 2. Make the base: In a bowl, mix oats, flour, brown sugar, cinnamon, and salt. Add coconut oil, maple syrup, and vanilla. Stir until crumbly.
- 3. Reserve 3/4 cup mixture for topping. Press remaining mixture firmly into the prepared pan.
- 4. Make the filling: In a saucepan, combine blueberries, lemon juice, cornstarch, and honey. Cook over medium heat for 5-7 minutes until thickened. Cool slightly.
- 5. Spread blueberry filling over the base. Sprinkle reserved oat mixture on top.
- 6. Bake for 30-35 minutes until golden. Cool completely before slicing into bars.
Notes
Store in airtight container for 5 days or freeze for up to 3 months. Thaw overnight before serving. Substitute raspberries or blackberries for variation.
