A luscious and tangy cream cheese frosting infused with fresh blueberry flavor, perfect for topping cakes, cupcakes, or cookies.

For the Crust:
- For the blueberry puree:
- 1 cup fresh blueberries
- 1 tablespoon granulated sugar
- 1 teaspoon lemon juice
- For the frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
1. Prepare the Crust:
- Make the blueberry puree: In a small saucepan, combine blueberries, sugar, and lemon juice. Cook over medium heat for 5-7 minutes until berries burst and mixture thickens slightly.
- Remove from heat and let cool completely, then blend until smooth. Strain through a fine mesh sieve to remove skins if desired.
- Make the frosting: In a large bowl, beat cream cheese and butter together until smooth and creamy (about 2 minutes).
- Gradually add powdered sugar, 1 cup at a time, beating well after each addition.
- Add vanilla extract, salt, and 3 tablespoons of the cooled blueberry puree. Beat until fully incorporated and fluffy (about 3 minutes).
- Adjust consistency with more puree for stronger flavor or more powdered sugar if too soft.
Notes
For deeper color, add 1-2 drops of purple food gel. Store leftovers in refrigerator for up to 5 days. Bring to room temperature and re-whip before using.
