For the Crust:

  • For the blueberry puree:
  • 1 cup fresh blueberries
  • 1 tablespoon granulated sugar
  • 1 teaspoon lemon juice
  • For the frosting:
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. Make the blueberry puree: In a small saucepan, combine blueberries, sugar, and lemon juice. Cook over medium heat for 5-7 minutes until berries burst and mixture thickens slightly.
  2. Remove from heat and let cool completely, then blend until smooth. Strain through a fine mesh sieve to remove skins if desired.
  3. Make the frosting: In a large bowl, beat cream cheese and butter together until smooth and creamy (about 2 minutes).
  4. Gradually add powdered sugar, 1 cup at a time, beating well after each addition.
  5. Add vanilla extract, salt, and 3 tablespoons of the cooled blueberry puree. Beat until fully incorporated and fluffy (about 3 minutes).
  6. Adjust consistency with more puree for stronger flavor or more powdered sugar if too soft.

Notes

For deeper color, add 1-2 drops of purple food gel. Store leftovers in refrigerator for up to 5 days. Bring to room temperature and re-whip before using.
