  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/3 cup milk
  • 1 1/2 cups fresh blueberries (or frozen, unthawed)
  • For the topping:
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cubed

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease an 8×8-inch baking pan.
  2. Whisk together flour, baking powder, and salt in a medium bowl. Set aside.
  3. In a large bowl, beat softened butter and sugar until light and fluffy (2-3 minutes).
  4. Beat in egg and vanilla until combined.
  5. Alternately add flour mixture and milk, beginning and ending with flour (3 additions total). Fold gently until just combined.
  6. Gently fold in blueberries. Spread batter evenly in prepared pan.
  7. Make topping: Combine sugars, flour, and cinnamon. Cut in cold butter until mixture resembles coarse crumbs.
  8. Sprinkle topping evenly over batter. Bake 35-45 minutes until golden and toothpick comes out clean.
  9. Cool 15 minutes before serving. Best eaten warm!

Notes

• For extra flavor, add 1 tsp lemon zest to batter. • Frozen berries may bleed color slightly. • Stores covered at room temp for 2 days or refrigerated for 5 days. • Freezes well for up to 3 months.
