Description

A fresh summer salad combining blueberries, peaches, and feta with a tangy honey-lemon vinaigrette.


Ingredients

  • 2 cups fresh blueberries
  • 3 ripe peaches, sliced
  • 1 cup crumbled feta cheese
  • 4 cups mixed greens
  • For the vinaigrette: 2 tablespoons honey
  • For the vinaigrette: Juice of 1 lemon
  • For the vinaigrette: 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and dry the blueberries and peaches.
  2. Slice the peaches into thin wedges.
  3. In a large bowl, combine the mixed greens, blueberries, peaches, and feta cheese.
  4. In a small bowl, whisk together honey, lemon juice, olive oil, salt, and pepper to make the vinaigrette.
  5. Drizzle the vinaigrette over the salad and toss gently to coat.
