For the Crust:

  • 2 lbs beef chuck, cubed
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 3 carrots, sliced
  • 2 potatoes, cubed
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Brown the beef cubes on all sides, then remove and set aside.
  2. Sauté onion and garlic in the same pot until fragrant. Add beef back to the pot along with broth and red wine. Bring to a simmer.
  3. Add carrots, potatoes, thyme, rosemary, salt, and pepper. Cover and simmer for 1.5 to 2 hours, until beef is tender and vegetables are cooked through.
