For the Crust:

  • 2 1/2 cups cake flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 3/4 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 4 large egg whites
  • 1/4 teaspoon cream of tartar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Sift together cake flour, baking powder, and salt in a medium bowl.
  3. In a large bowl, cream butter and sugar until light and fluffy. Gradually mix in milk and vanilla.
  4. Beat egg whites with cream of tartar until stiff peaks form.
  5. Fold dry ingredients into butter mixture alternately with beaten egg whites.
  6. Divide batter evenly between prepared pans. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
