For the Crust:

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 1 small head green cabbage, chopped
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup cooked brown rice
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 tbsp lemon juice
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add onion and carrots, sauté for 5 minutes until softened.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in chopped cabbage and cook for 3-4 minutes until slightly wilted.
  4. Add diced tomatoes, vegetable broth, cooked rice, thyme, and smoked paprika. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 20-25 minutes until vegetables are tender.
  6. Season with salt, pepper, and lemon juice. Garnish with fresh parsley before serving.
