For the Crust:
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 3 cloves garlic, minced
- 1 small head green cabbage, chopped
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 cup cooked brown rice
- 1 tsp dried thyme
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1 tbsp lemon juice
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add onion and carrots, sauté for 5 minutes until softened.
- Add garlic and cook for 1 minute until fragrant.
- Stir in chopped cabbage and cook for 3-4 minutes until slightly wilted.
- Add diced tomatoes, vegetable broth, cooked rice, thyme, and smoked paprika. Bring to a boil.
- Reduce heat to low, cover, and simmer for 20-25 minutes until vegetables are tender.
- Season with salt, pepper, and lemon juice. Garnish with fresh parsley before serving.
