A light and refreshing plant-based version of classic lettuce wraps, packed with flavor and crunch.

For the Crust:
- 1 tbsp olive oil
- 1 cup diced mushrooms
- 1 cup diced tofu
- 1/2 cup diced water chestnuts
- 1/4 cup diced green onions
- 2 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tsp minced garlic
- 1 tsp minced ginger
- 8 large butter lettuce leaves
- 1/4 cup chopped peanuts (optional)
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat.
- Add mushrooms, tofu, water chestnuts, green onions, garlic, and ginger. Cook for 5-7 minutes until softened.
- Stir in soy sauce and hoisin sauce. Cook for another 2 minutes.
- Spoon the mixture into lettuce leaves.
- Garnish with chopped peanuts if desired.

You can customize the seasonings to taste.
