For the Crust:
- 1 cup raw cashews, soaked overnight
- 1/2 cup unsweetened almond milk
- 2 tbsp lemon juice
- 1 tbsp apple cider vinegar
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup diced roasted red peppers
- 1/2 cup diced green bell pepper
- 1/2 cup diced red onion
- 1/4 cup sliced black olives
- 1/4 cup chopped fresh parsley
- 1 tsp dried oregano
- 1/2 tsp crushed red pepper flakes
- 1 loaf crusty bread or crackers for serving
Instructions
1. Prepare the Crust:
- Drain and rinse the soaked cashews. In a blender, combine cashews, almond milk, lemon juice, apple cider vinegar, garlic powder, onion powder, salt, and black pepper. Blend until smooth and creamy.
- Transfer the cashew mixture to a large bowl. Add roasted red peppers, green bell pepper, red onion, black olives, parsley, oregano, and red pepper flakes. Stir well to combine.
- Cover and refrigerate for at least 1 hour to allow flavors to meld. Serve chilled with crusty bread or crackers.
