For the Crust:
- 2 large cucumbers, thinly sliced
- 1/4 cup roasted peanuts, roughly chopped
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 1 tbsp fish sauce
- 1 tbsp honey
- 1 clove garlic, minced
- 1/2 tsp red pepper flakes
- 1 tbsp vegetable oil
Instructions
1. Prepare the Crust:
- In a large bowl, combine the sliced cucumbers, red onion, and cilantro.
- In a small bowl, whisk together lime juice, fish sauce, honey, minced garlic, red pepper flakes, and vegetable oil to make the dressing.
- Pour the dressing over the cucumber mixture and toss gently to coat.
- Sprinkle chopped peanuts on top before serving.
- Chill for 10 minutes before serving to let flavors meld.
