For the Crust:

  • 4 boneless, skinless chicken breasts
  • 3 medium shallots, thinly sliced
  • 2 lemons, juiced and zested
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup chicken broth
  • 1 tbsp honey

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken breasts with salt, pepper, and thyme, then add to the skillet. Cook for 5-6 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, add shallots and garlic. Sauté for 2-3 minutes until softened.
  4. Stir in lemon juice, zest, chicken broth, and honey. Bring to a simmer.
  5. Return chicken to the skillet, spooning the sauce over the top. Cook for another 5 minutes until chicken is fully cooked and sauce has slightly thickened.
  6. Serve hot, garnished with additional lemon slices if desired.
