Description

A classic holiday side dish with sweet potatoes topped with a crunchy pecan streusel.


Ingredients

  • 4 cups mashed sweet potatoes
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • Topping: 1 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1/3 cup melted butter
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.
  2. In a large bowl, mix together the sweet potatoes, sugar, eggs, salt, milk, melted butter, and vanilla extract until smooth. Pour into the prepared baking dish.
  3. In another bowl, mix the brown sugar, flour, melted butter, and pecans. Sprinkle the mixture over the sweet potatoes.
  4. Bake for 25 to 30 minutes in the preheated oven, or until the topping is lightly browned.

Notes

For a nut-free version, omit the pecans and use oats instead.
