For the Crust:
- 2 cups shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 1 cup corn kernels (fresh or frozen)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 lime, juiced
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 cup chopped cilantro
- 1/4 cup crumbled cotija cheese
- Tortilla chips for serving
Instructions
1. Prepare the Crust:
- In a medium saucepan over low heat, combine Monterey Jack cheese, cheddar cheese, mayonnaise, and sour cream. Stir until melted and smooth.
- Add corn kernels, lime juice, chili powder, and smoked paprika. Stir to combine and cook for 5 minutes until heated through.
- Transfer the queso to a serving bowl and top with chopped cilantro and crumbled cotija cheese.
- Serve warm with tortilla chips.
