For the Crust:

  • 1 cup unsalted butter, melted
  • 1 1/2 cups light brown sugar, packed
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, diced

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan and line with parchment paper.
  2. In a large bowl, whisk together melted butter and brown sugar until smooth. Add eggs, lemon zest, and lemon juice, mixing well.
  3. In a separate bowl, combine flour, baking powder, and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  4. Gently fold in diced strawberries. Spread batter evenly into prepared baking pan.
  5. Bake for 25-30 minutes or until edges are golden and a toothpick inserted in the center comes out clean.
  6. Allow to cool completely in pan before cutting into squares.
