For the Crust:
- 1 cup unsalted butter, melted
- 1 1/2 cups light brown sugar, packed
- 2 large eggs
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup fresh strawberries, diced
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan and line with parchment paper.
- In a large bowl, whisk together melted butter and brown sugar until smooth. Add eggs, lemon zest, and lemon juice, mixing well.
- In a separate bowl, combine flour, baking powder, and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Gently fold in diced strawberries. Spread batter evenly into prepared baking pan.
- Bake for 25-30 minutes or until edges are golden and a toothpick inserted in the center comes out clean.
- Allow to cool completely in pan before cutting into squares.
