For the Crust:

  • 1 lb ground beef
  • 2 cups fresh spinach, chopped
  • 8 small corn tortillas
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheese
  • 1/4 cup sour cream
  • 1/4 cup salsa

Instructions

1. Prepare the Crust:

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add onions and garlic to the skillet and sauté for 2-3 minutes until softened.
  3. Stir in chopped spinach, cumin, chili powder, salt, and black pepper. Cook until spinach wilts, about 3 minutes.
  4. Warm the corn tortillas in a dry skillet or microwave for 30 seconds.
  5. Fill each tortilla with the beef-spinach mixture. Top with shredded cheese, sour cream, and salsa.
  6. Serve immediately and enjoy.

You can customize the seasonings to taste.
