For the Crust:
- 4 large turkey wings, separated at joints
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1/4 cup all-purpose flour
- 2 tbsp vegetable oil
- 1 tsp smoked paprika
- 1 tsp thyme
- 1/2 tsp black pepper
- 1/2 tsp salt
- 2 bay leaves
Instructions
1. Prepare the Crust:
- Season turkey wings with salt, pepper, paprika, and thyme.
- Heat oil in a large skillet over medium-high heat. Brown turkey wings on all sides, then remove and set aside.
- In the same skillet, sauté onion and garlic until softened. Sprinkle flour over vegetables and cook for 1-2 minutes, stirring constantly.
- Gradually whisk in chicken broth until smooth. Bring to a simmer, then return turkey wings to the skillet. Add bay leaves.
- Reduce heat to low, cover, and simmer for 1.5–2 hours, until turkey is tender and gravy has thickened. Remove bay leaves before serving.
