For the Crust:
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) black beans, drained
- 1 can (28 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 2 cups beef broth
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a skillet over medium heat, brown the ground beef with the onion and garlic until fully cooked. Drain excess fat.
- Transfer the beef mixture to the slow cooker. Add the bell pepper, kidney beans, black beans, diced tomatoes, tomato paste, and beef broth.
- Stir in the chili powder, cumin, paprika, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, stirring occasionally.
- Serve hot with optional toppings like shredded cheese, sour cream, or chopped green onions.
