A flavorful one-pot dish with shrimp, sausage, and rice cooked in a rich, spicy tomato broth.

For the Crust:
- 1 lb shrimp, peeled and deveined
- 12 oz smoked sausage, sliced
- 1 cup long-grain white rice
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 1 tbsp Cajun seasoning
- 1 tsp dried thyme
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, about 5 minutes. Remove and set aside.
- In the same pot, add onion, bell pepper, and celery. Cook until softened, about 5 minutes. Add garlic and cook for 1 more minute.
- Stir in rice, Cajun seasoning, thyme, diced tomatoes, and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- Add shrimp and cooked sausage to the pot. Cover and cook for 5 more minutes or until shrimp are pink and cooked through.
- Season with salt and pepper to taste. Serve hot.
