For the Crust:

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup white wine
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/2 cup crumbled feta cheese
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add onion and sauté until translucent, about 3 minutes.
  2. Add garlic and cook for another 30 seconds until fragrant. Stir in diced tomatoes, white wine, oregano, and red pepper flakes. Simmer for 10 minutes.
  3. Add shrimp to the skillet and cook for 3-4 minutes until pink and cooked through. Sprinkle with feta cheese and cover for 1-2 minutes until cheese softens.
  4. Garnish with fresh parsley and serve hot with crusty bread or over rice.

You can customize the seasonings to taste.
