For the Crust:
- 1 cup canned pumpkin puree
- 2 large eggs
- 1/2 cup vegetable oil
- 1/3 cup milk
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together pumpkin puree, eggs, oil, and milk until smooth.
- In another bowl, combine flour, sugar, baking powder, baking soda, spices, and salt.
- Gradually fold dry ingredients into wet ingredients until just combined; do not overmix.
- Divide batter evenly among muffin cups, filling each about 3/4 full.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean. Cool before serving.
