For the Crust:

  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/3 cup milk
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together pumpkin puree, eggs, oil, and milk until smooth.
  3. In another bowl, combine flour, sugar, baking powder, baking soda, spices, and salt.
  4. Gradually fold dry ingredients into wet ingredients until just combined; do not overmix.
  5. Divide batter evenly among muffin cups, filling each about 3/4 full.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Cool before serving.
