Soft pumpkin oatmeal cookies sandwiching a sweet cream cheese filling, perfect for fall.

For the Crust:

  • 1 cup canned pumpkin puree
  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 4 oz cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, cream together butter, brown sugar, and granulated sugar. Beat in egg, pumpkin, and vanilla.
  3. Whisk together flour, oats, pumpkin pie spice, baking soda, and salt. Gradually mix into wet ingredients.
  4. Drop tablespoon-sized dough onto baking sheets. Bake for 10-12 minutes. Cool completely.
  5. For filling, beat cream cheese and butter until smooth. Add powdered sugar and vanilla; mix until creamy.
  6. Spread filling on flat side of one cookie; top with another cookie to form a sandwich.

You can customize the seasonings to taste.
