For the Crust:

  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups rolled oats
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup semi-sweet chocolate chips

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together pumpkin puree, sugars, and butter until smooth.
  3. Beat in egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, oats, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually stir dry ingredients into wet ingredients until just combined.
  6. Fold in chocolate chips.
  7. Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart.
  8. Bake for 12-14 minutes until edges are lightly golden.
  9. Let cool on baking sheets for 5 minutes before transferring to wire racks.
