Irresistible Pumpkin Hand Pies

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup ice water
  • 1 cup pumpkin puree
  • 1/4 cup brown sugar
  • 1 teaspoon pumpkin pie spice
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon granulated sugar (for sprinkling)

Instructions

1. Prepare the Crust:

  1. In a large bowl, whisk together flour and salt. Cut in cold butter until mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tablespoon at a time, until dough comes together. Form into a disk, wrap in plastic, and chill for 30 minutes.
  3. In a separate bowl, mix pumpkin puree, brown sugar, and pumpkin pie spice until well combined.
  4. Roll out the dough to 1/8-inch thickness and cut into circles. Spoon pumpkin filling onto half of each circle, leaving a border.
  5. Fold dough over filling, crimp edges with a fork, and brush with egg wash. Sprinkle with granulated sugar.
  6. Bake at 375°F (190°C) for 20-25 minutes or until golden brown. Cool slightly before serving.

Notes

You can customize the seasonings to taste.
