For the Crust:

  • 2 cups old-fashioned rolled oats
  • 1/2 cup chopped pecans
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1 3/4 cups milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup brown sugar
  • 2 tbsp melted butter

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F and grease an 8×8 baking dish.
  2. In a large bowl, combine oats, pecans, cinnamon, and salt.
  3. In another bowl, whisk together eggs, milk, maple syrup, vanilla, and melted butter.
  4. Pour wet ingredients into dry ingredients and stir until combined.
  5. Transfer mixture to prepared baking dish and sprinkle with brown sugar.
  6. Bake for 30-35 minutes until set and golden brown on top.
  7. Let cool for 5 minutes before serving.

Notes

You can customize the seasonings to taste.
