For the Crust:

  • 2 cups gluten-free rolled oats
  • 1/2 cup chopped pecans
  • 1/4 cup maple syrup
  • 1/4 cup coconut sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 3/4 cups unsweetened almond milk
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 flax egg (1 tbsp ground flax + 3 tbsp water)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and grease an 8×8 baking dish.
  2. In a large bowl, combine oats, pecans, coconut sugar, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together almond milk, maple syrup, melted coconut oil, vanilla, and flax egg.
  4. Pour wet ingredients into dry and stir until well combined. Transfer to baking dish.
  5. Bake for 30-35 minutes until set and golden. Let cool slightly before serving.

You can customize the seasonings to taste.
